Goat Cheese and Arugula Stuffed Chicken Breasts are low in calories and taste like a million.  A very sophisticated dinner recipe. Enjoy!

Ingredients

  • 2 ounces soft, reduced-fat goat cheese (cut into small pieces)
  • 1 garlic clove minced
  • 4 boneless, skinless chicken breasts
  • 1 bunch of arugula (trimmed and coarsely chopped)
  • coarse ground salt and pepper
  • 1 tablespoon extra virgin olive oil
  • 3/4 cup chicken broth

Directions

  1. Stir together cheese and garlic in a small bowl-
  2. Cut a horizontal pocket into the thickest part of each chicken breast
  3. Stuff each pocket with cheese and then arugula
  4. Press each chicken breast to seal and then salt and pepper each one
  5. Heat oil in a large pan on medium-high heat
  6. Brown the chicken for 4 minutes on each side
  7. Add the broth to the pan and simmer for 6 more minutes.
  8. Serve while hot
