These moist muffins make an excellent grab-and-go breakfast snack for those busy morning routines.

Ingredients

  • 1/4 cup butter, softened
  • 3/4 cup sugar
  • 2 eggs
  • 3/4 cup lemon-flavored yogurt
  • 1/2 teaspoon lemon juice
  • 1 teaspoon lemon peel, grated
  • 1-1/3 cups flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1-1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup powdered sugar
  • 2 teaspoons lemon juice

Directions

  1. Cream butter, sugar and eggs.
  2. Stir in yogurt, 1/2 teaspoon lemon juice and lemon peel.
  3. In a separate bowl, combine flour, baking soda, salt, cinnamon and nutmeg.
  4. Blend flour combination into egg mixture.
  5. Pour batter into a greased muffin tin.
  6. Bake at 400 degrees for 15-18 minutes.
  7. Mix together powdered sugar, and 1/2 teaspoon lemon juice until mixture resembles a glaze; pour over warm muffins.

These glazed lemon-yogurt muffins look melt-in-your-mouth good. Perfect for Sunday Brunch. And anything glazed has got to be good.
