These moist muffins make an excellent grab-and-go breakfast snack for those busy morning routines.
Ingredients
- 1/4 cup butter, softened
- 3/4 cup sugar
- 2 eggs
- 3/4 cup lemon-flavored yogurt
- 1/2 teaspoon lemon juice
- 1 teaspoon lemon peel, grated
- 1-1/3 cups flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1-1/2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup powdered sugar
- 2 teaspoons lemon juice
Directions
- Cream butter, sugar and eggs.
- Stir in yogurt, 1/2 teaspoon lemon juice and lemon peel.
- In a separate bowl, combine flour, baking soda, salt, cinnamon and nutmeg.
- Blend flour combination into egg mixture.
- Pour batter into a greased muffin tin.
- Bake at 400 degrees for 15-18 minutes.
- Mix together powdered sugar, and 1/2 teaspoon lemon juice until mixture resembles a glaze; pour over warm muffins.
