Low-fat brown sugar and ginger seasoned sweet potatoes.
- 2 medium sweet potatoes, sliced and diced
- 1 tablespoon low-fat margarine
- 1 teaspoon brown sugar
- 1/4 teaspoon ground ginger or pumpkin pie spice
- Add the potatoes to a steam rack and steam over boiling water until tender. Place in a serving dish. Mix together the remaining ingredients and toss with the potatoes.
