Gingerbread Cupcakes can be dusted with confectioners' sugar or frosted with buttercream.
Ingredients
- 2 1/2 cups cake flour, sifted
- 1 1/2 teaspoons baking soda
- 1 teaspoon cinnamon
- 1 teaspoon ginger
- 1/2 teaspoon cloves
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 1 1/2 cups dark molasses
- 1 egg, beaten
- 3/4 cup cold coffee
Directions
- Sift flour, soda, spices and salt. Beat butter and molasses together in a large bowl with an electric mixer until blended; add egg and beat again.
- Add dry mixture alternately with the coffee, beating well after each addition. Fill paper lined muffin cups 2/3's full and bake at 350 degrees F for 20 minutes. Cool completely on a wire rack.
