Gingerbread Cupcakes can be dusted with confectioners' sugar or frosted with buttercream.

Ingredients

  • 2 1/2 cups cake flour, sifted
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon cloves
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 1/2 cups dark molasses
  • 1 egg, beaten
  • 3/4 cup cold coffee

Directions

  1. Sift flour, soda, spices and salt. Beat butter and molasses together in a large bowl with an electric mixer until blended; add egg and beat again.
  2. Add dry mixture alternately with the coffee, beating well after each addition. Fill paper lined muffin cups 2/3's full and bake at 350 degrees F for 20 minutes. Cool completely on a wire rack.
