This ginger vinaigrette, made with a blend of rice vinegar and finely grated fresh ginger, significantly compliments the crisp crunchiness of a cabbage and carrot-based salad.
- 1/4 cup rice vinegar
- 1-1/2 tablespoons sugar
- 1 tablespoon finely grated fresh ginger
- 1/4 cup vegetable oil
- Sea salt and freshly ground pepper
- Place the rice vinegar and sugar into a bowl and whisk vigorously until the sugar has completely dissolved.
- Add the ginger, oil and a pinch of salt and pepper, and continue to whisk until the vinaigrette is well blended. Serve immediately.
