Batter can be refrigerated and used as needed. Wonderful winter breakfast.

Ingredients

  • 1 cup margarine
  • 1 cup sugar
  • 4 eggs
  • 1 cup molasses
  • 1 cup buttermilk
  • 4 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon cinnamon
  • 2 teaspoons ginger
  • 1/2 teaspoons salt
  • 1/2 cup raisins
  • 1 cup walnut meats

Directions

  1. Preheat oven to 350 degrees Fahrenheit. Grease muffin pans.
  2. Beat the butter until fluffy. Add the sugar, and eggs, one at a time, molasses, and buttermilk. Mix well.
  3. Sift the flour, baking soda, cinnamon, ginger and salt. Add to the butter mixture along with the raisins and nuts.
  4. Spoon into the prepared pan and bake for 20-25 minutes.
