Ingredients

  • 5 pounds red potatoes,
  • 1/4 cup bacon, finely diced
  • 1/4 cup onion, chopped
  • 2 teaspoons salt
  • 1 1/4 tablespoons sugar
  • 1/4 teaspoon pepper
  • 2/3 cup cider vinegar
  • 1/3 cup water
  • 3 tablespoons parsley, chopped

Directions

  1. Cook unpeeled potatoes in enough water to cover until tender. Cool to touch; peel and cube. Fry bacon and onions until crisp. Add to same pan, sugar, salt, pepper and vinegar. Cook for 3 to 4 minutes, stirring constantly. Pour this hot dressing over potatoes and keep warm. Serve immediately.
