Garlic takes center stage in this intense rub that works well on extra-firm tofu, seafood, fish and pork.


  • 8 cloves garlic, minced
  • 1 tablespoon extra-virgin olive oil
  • 2 teaspoons stone-ground mustard
  • 1-1/2 teaspoons sea salt
  • 1/2 teaspoon freshly ground pepper
  • 1/2 teaspoon freshly grated lemon zest


  1. Place all of the ingredients into a small bowl and mix together with your fingers to combine.
  2. Rub the mixture onto the protein of your choice right before grilling.
