This gin-based cocktail is made with fresh grapefruit juice, muddled cucumbers and a touch of Aperol.

- Place the cucumber slices into a cocktail shaker and muddle well.
- Add the gin, Aperol, grapefruit juice and simple syrup to the shaker and then fill with ice.
- Vigorously shake the mixture for 35 seconds and then strain into a cocktail glass filled with cracked ice.
- Garnish the drink with the cucumber ribbon and then serve immediately.
