Garden Zucchini Bread is filled with summer's bounty.
Ingredients
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 teaspoon lemon peel, grated
- 1/2 teaspoon orange extract
- 1 1/2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon soda
- 1/2 teaspoon salt
- 1/8 teaspoon each nutmeg, ginger
- 1 cup zucchini, unpeeled and grated
- 1/2 cup pecans, chopped
Directions
- Beat first 5 ingredients together in bowl. Sift dry ingredients together. Add alternately with zucchini to sugar mixture, beating well after each addition. Stir in nuts. Pour into greased loaf pan.
- Bake at 375 degrees F for 55 to 60 minutes. Cool for 15 minutes before removing from pan.
