Southern garden vegetable soup.
Ingredients
- 1 tablespoon butter
- 5 carrots, diced
- 2 turnips, diced
- 3/4 cup cabbage
- 3 green onions, chopped
- 8 cups soup stock
- 1 1/2 cups peas, shelled
- salt and pepper to taste
- 4 potatoes, diced
- 3 tablespoons parsley, minced
Directions
- In a large, heavy pot melt the butter.
- Add in the carrots, turnips and cabbage and lightly saute.
- Mix in the soup stock, onions, peas, potatoes, parsley, salt and pepper and simmer for 40 minutes.
