Southern garden vegetable soup.

Ingredients

  • 1 tablespoon butter
  • 5 carrots, diced
  • 2 turnips, diced
  • 3/4 cup cabbage
  • 3 green onions, chopped
  • 8 cups soup stock
  • 1 1/2 cups peas, shelled
  • salt and pepper to taste
  • 4 potatoes, diced
  • 3 tablespoons parsley, minced

Directions

  1. In a large, heavy pot melt the butter.
  2. Add in the carrots, turnips and cabbage and lightly saute.
  3. Mix in the soup stock, onions, peas, potatoes, parsley, salt and pepper and simmer for 40 minutes.
