Ingredients
- 1 can (40 ounces) sweet potatoes drained and mashed
- 1 8-ounce can crushed pineapple, drained
- 1/4 cup each bourbon, brown sugar and raisins
- 1/4 cup shredded coconut
- 2 teaspoons pumpkin pie spice
- 1 teaspoon salt
Directions
- Combine all ingredients in large bowl.
- Pour into greased or sprayed 2-quart casserole dish.
- Bake at 350F for 40 minutes.
