Frozen Chocolate Pecan Pie is made with a great combo of favorite flavors.
Ingredients
- Crust: 2 cups pecans, ground
- 1/3 cup brown sugar
- 5 tablespoons butter, melted
- 2 teaspoons rum
- Filling: 6 ounces chocolate chips
- 1/2 teaspoon instant coffee
- 4 eggs
- 1 tablespoons rum
- 1 teaspoon vanilla
- 1 cup whipping cream
Directions
- Make Crust: Blend all crust ingredients until it holds together. Press into a 9 inch pie pan. Freeze one hour.
- Filling: Melt chocolate with coffee in a double boiler. Remove from heat and whisk in eggs, rum and vanilla. Let cool 5 minutes. Whip cream until stiff peaks form. Gently fold into chocolate mixture. Pour into crust and freeze.
- About one hour before serving, transfer to refrigerator to soften a bit before cutting into wedges.
