You can also add a scrambled egg to this recipe if desired.

Ingredients

  • 1 teaspoon vegetable oil
  • 3 cups cooked rice
  • 1/2 cup diagonally sliced celery
  • 1/2 cup sliced water chestnuts
  • 1/3 cup sliced green onions
  • 2 teaspoons soy sauce

Directions

  1. Coat a skillet with non stick spray.
  2. Add oil.
  3. Place over medium high heat until hot.
  4. Add rice to skillet.
  5. Stir fry 3 to 4 minutes.
  6. Stir in clery and water chestnuts.
  7. Stir fry 2 to 3 minutes until celery is tender.
  8. Add green onions and soy sauce.
  9. Toss and serve.
