Fried Calamari tastes great with a generous squeeze of fresh lemon juice.
Ingredients
- 2 cups buttermilk
- 2 teaspoons hot sauce
- 1 1/2 pounds fresh or frozen calamari, thawed
- 1 cup yellow cornmeal
- 1/2 cup flour
- 1 teaspoon salt
- 1 teaspoon pepper
- vegetable oil for frying
Directions
- Combine buttermilk and hot sauce in a large bowl; stir in calamari. Cover and chill for 30 minutes in the refrigerator.
- Stir together cornmeal, flour, salt and paprika. Remove calamari from buttermilk; dredge in cornmeal mixture, shaking off excess.
- Heat oil in a large, heavy saucepan. Heat to 375 degrees F. Fry calamari in the hot oil, in batches, for about 1 to 3 minutes per batch or until golden brown. Remove to paper towels to drain.
