Fried Calamari

Fried Calamari tastes great with a generous squeeze of fresh lemon juice.


  • 2 cups buttermilk
  • 2 teaspoons hot sauce
  • 1 1/2 pounds fresh or frozen calamari, thawed
  • 1 cup yellow cornmeal
  • 1/2 cup flour
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • vegetable oil for frying


  1. Combine buttermilk and hot sauce in a large bowl; stir in calamari. Cover and chill for 30 minutes in the refrigerator.
  2. Stir together cornmeal, flour, salt and paprika. Remove calamari from buttermilk; dredge in cornmeal mixture, shaking off excess.
  3. Heat oil in a large, heavy saucepan. Heat to 375 degrees F. Fry calamari in the hot oil, in batches, for about 1 to 3 minutes per batch or until golden brown. Remove to paper towels to drain.
