Fresh Zucchini and Mushroom Sauté

This side dish of zucchini and mushrooms is seasoned with a mix of Mediterranean herbs including: basil, thyme, and oregano.


  • 2 teaspoons extra-virgin olive oil
  • 2 small zucchinis, julienned
  • 1-1/2 cups sliced mushrooms
  • 1 teaspoon chopped fresh basil
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh oregano
  • Salt & freshly ground pepper to taste


  1. Place a large sauté pan over high heat and sauté the zucchini for 2 minutes.
  2. Stir in the mushrooms and cook for an additional 30 seconds.
  3. Sprinkle in the basil, thyme and oregano and sauté the mixture for 1 minute.
  4. Season to taste with salt and pepper and serve immediately.
