Fresh Sauteed Tomato Sauce with Garlic

There is no need to purchase pre-made tomato sauce for your pasta when making your own homemade version is so simple and delicious. Enjoy it tossed with the pasta of your choice and topped with freshly grated Parmesan cheese. 

Ingredients

  • 1 pint grape tomatoes
  • Sea salt
  • 2 cloves garlic, minced
  • 1 handful fresh basil, chopped
  • 2-1/2 tablespoons
  • 1 handful of fresh basil

Directions

  1. Place the olive oil into a large sauté pan over medium heat. Once the oil begins to shimmer, add the tomatoes and sauté until they burst open. Reduce the heat to low, and then stir in the minced garlic, basil and a few pinches of salt and pepper. Cook the mixture for a few minutes until the garlic is fragrant and then take off the heat.
  2. Set the mixture aside for 5 minutes to cool, and then transfer to a food processor with the fresh basil. Pulse the mixture until combined yet still chunky in texture.

This recipe was so simple and yielded amazing results! I used 4 large tomatoes from my over abundant garden- just sliced them. Next time would do a few more because they cook down a bunch. It was so fresh and so delicious, it will be my new go to!
