Salsa Verde is an extremely versatile sauce that can be enjoyed with a variety dishes including grilled salmon, roasted poultry or even scrambled or poached eggs.
Ingredients
- 1-1/2 cups (2 handfuls) parsley leaves, de-stemmed
- 1 handful (about 40) chives, chopped
- 1 cup extra virgin olive oil
- 1/4 cup capers
- 3 cloves garlic
- 4 tablespoons fresh lemon juice
- 2 teaspoons Dijon mustard
- Freshly ground black pepper
- 1/4 small red onion, chopped
- 1 small tin (8-10) anchovies, drained
- yolk of one hardboiled egg
Directions
- Put all of the ingredients into a food processor or a blender, and process the mixture until smooth. Serve immediately or store in an airtight jar for up to 1 week.
