Salsa Verde is an extremely versatile sauce that can be enjoyed with a variety dishes including grilled salmon, roasted poultry or even scrambled or poached eggs.

Ingredients

  • 1-1/2 cups (2 handfuls) parsley leaves, de-stemmed
  • 1 handful (about 40) chives, chopped
  • 1 cup extra virgin olive oil
  • 1/4 cup capers
  • 3 cloves garlic
  • 4 tablespoons fresh lemon juice
  • 2 teaspoons Dijon mustard
  • Freshly ground black pepper
  • 1/4 small red onion, chopped
  • 1 small tin (8-10) anchovies, drained
  • yolk of one hardboiled egg

Directions

  1. Put all of the ingredients into a food processor or a blender, and process the mixture until smooth. Serve immediately or store in an airtight jar for up to 1 week.
