Nothing says summer like the taste of fresh corn cut straight from the cob. Serve this sweet and zesty dish as an appetizer, or enjoy it as a tasty side to grilled meat, poultry or fish. 


  • 4 tomatoes, diced
  • 1 cup corn
  • 1/4 cup red onion, diced
  • 1/4 cup chopped fresh cilantro, roughly chopped
  • 1 jalapeno pepper, finely diced
  • 1/4 cup homemade or prepared Italian Dressing


  1. Place the tomatoes, corn, onion, cilantro, and jalapeno pepper into a salad bowl, and the pour over the dressing. Gently toss the mixture to combine and serve.
