Tart apples and pecans make Fresh Apple Cake a perfect dessert for a cool fall day.  Add a dollop of freshly whipped cream to make it fancy.

Ingredients

  • 2 cups Granny Smith apples, chopped
  • 1 cup sugar
  • 1 egg
  • 1/2 cup pecans, chopped
  • 1 cup flour
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda

Directions

  1. Place apples and sugar in a large bowl. Let sit for 15 minutes.
  2. Add the egg and pecans. Mix.
  3. Sift flour, salt, cinnamon, and baking soda. Stir into apple mixture. Blend well.
  4. Pour batter into a greased 8 inch square baking pan. Bake at 350 degrees F for 35-40 minutes.
