French Oven Beef Stew is flavored with red wine and basil.

Ingredients

  • 2 pounds beef, cut into 1 1/2 inch cubes
  • 2 medium onions, cut into chunks
  • 3 ribs celery, cut diagonally
  • 4 carrots, cut in half
  • 1 cup tomato juice
  • 1/3 cup quick cooking tapioca
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon basil
  • 2 medium potatoes, cut in 1/4 inch thick slices
  • 1/2 cup red wine

Directions

  1. Combine beef, onions, celery, carrots, tomato juice, salt, pepper, basil, sugar and tapioca in 2 1/2 quart casserole. Cover and bake at 300 degrees F for 2 1/2 hours.
  2. Mix potatoes into stew and add red wine. Cook, uncovered, an additional 1 hour. Stir occasionally.
