French Oven Beef Stew is flavored with red wine and basil.
Ingredients
- 2 pounds beef, cut into 1 1/2 inch cubes
- 2 medium onions, cut into chunks
- 3 ribs celery, cut diagonally
- 4 carrots, cut in half
- 1 cup tomato juice
- 1/3 cup quick cooking tapioca
- 1 tablespoon sugar
- 1 tablespoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon basil
- 2 medium potatoes, cut in 1/4 inch thick slices
- 1/2 cup red wine
Directions
- Combine beef, onions, celery, carrots, tomato juice, salt, pepper, basil, sugar and tapioca in 2 1/2 quart casserole. Cover and bake at 300 degrees F for 2 1/2 hours.
- Mix potatoes into stew and add red wine. Cook, uncovered, an additional 1 hour. Stir occasionally.
