There's is a bit of  "oo la la" in these French Lemon Bars.

Ingredients

  • 3/4 cup butter, softened
  • 1/3 cup confectioner's sugar
  • 1 1/2 cups sifted flour
  • 3 eggs
  • 1 1/2 cups sugar
  • 1 tablespoon flour
  • 3 tablespoons fresh lemon juice
  • pinch of grated lemon rind

Directions

  1. Cream butter with confectioner's sugar, add flour, mix with pastry blender. Pat into a 9 by 13 inch baking pan. Bake at 350 degrees F for 20 minutes.
  2. Beat eggs, mix in sugar, flour and juice by hand. Add lemon rind. Pour over hot, baked crust and return to oven. Bake 20 minutes.
  3. Cool and dust with confectioner's sugar. Cut into squares.
