A fresh and savory spread to be enjoyed slathered onto chunks of peasant bread and served with a Chablis or chilled Retsina.
Ingredients
- 3 tablespoons fish roe
- 1 spring onion
- 1 garlic clove, peeled and crushed
- 6 slices rye bread
- 3/4 cup olive oil
- 1/2 bunch of parsley
- Freshly ground pepper
- 1/2 bunch fresh dill
- Juice of 1-1/2 lemons
- Milk
Directions
- Place the bread into a bowl, moisten with a splash of milk and then drain well.
- Put the softened bread into a food processor, along with the roe, onion, garlic, parsley, pepper, dill and lemon juice, and process until mixed.
- With the motor running, slowly pour the oil down the processor flute and continue to blend to combine. Serve immediately drizzled with some olive oil.
