Fish Roe Spread

A fresh and savory spread to be enjoyed slathered onto chunks of peasant bread and served with a Chablis or chilled Retsina.


  • 3 tablespoons fish roe
  • 1 spring onion
  • 1 garlic clove, peeled and crushed
  • 6 slices rye bread
  • 3/4 cup olive oil
  • 1/2 bunch of parsley
  • Freshly ground pepper
  • 1/2 bunch fresh dill
  • Juice of 1-1/2 lemons
  • Milk


  1. Place the bread into a bowl, moisten with a splash of milk and then drain well.
  2. Put the softened bread into a food processor, along with the roe, onion, garlic, parsley, pepper, dill and lemon juice, and process until mixed.
  3. With the motor running, slowly pour the oil down the processor flute and continue to blend to combine. Serve immediately drizzled with some olive oil.
