Fig and Prosciutto Salad with Arugula and Feta Cheese

These figs are first marinated in a port and honey pepper sauce and then served with feta, arugula and prosciutto. A perfect combination of flavors.

Ingredients

  • 3 tablespoons port
  • 12 mission black figs
  • 1 tablespoon honey
  • 2 teaspoons freshly ground pepper
  • 1 bunch of arugula, washed, trimmed, and dried
  • 12 slices prosciutto
  • 1 cup feta
  • 1/2 cup walnuts, toasted

Directions

  1. Cut each fig in half.
  2. Mix the port, honey and pepper together in a large dish and place the figs face side down in the mixture. Marinade the figs for 2-1/2 hours at room temperature.
  3. Divide the arugula between 6 plates and then add 3 figs on each plate and 2 slices of prosciutto. Evenly sprinkle the feta and walnuts on the plates and then drizzle with the port marinade.
