Flavored with chicken and onion, Festive White and Wild Rice is a delicious side dish.
- 1/2 cup wild rice
- 1 small onion, diced
- 1 chicken flavor bouillon cube
- 1 cup long grain rice
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- Wash wild rice well; drain. In 2 quart saucepan over high heat, heat 1 cup water to boiling; stir in wild rice. Reduce heat to low; cover and simmer 45 minutes or until rice is tender and all liquid is absorbed.
- About 30 minutes before wild rice is done, in 4 quart saucepan over medium heat, in 2 tablespoons hot butter, cook onion until tender, stirring occasionally. Add bouillon and 2 cups water; over high heat, heat to boiling; sitr in long grain rice. Reduce heat to low; cover and simmer 20 minutes or until rice is tender and all liquid is absorbed.
- Stir wild rice into white rice mixture in saucepan; stir in salt, pepper and 2 tablespoons butter, until butter is melted.
