Escarole with Beans is a great vegetarian side dish.
Ingredients
- 2 cups cooked northern beans
- 3 cups boiled escarole
- 3 tablespoons oil
- 2 garlic cloves, sliced
- 1/4 teaspoon red pepper flakes
Directions
- In a saucepan, heat oil and brown garlic. Cool. Add red pepper. Add escarole and saute 3 minutes. Add beans, 3/4 cup water and cook for 15 minutes. Salt to taste.
