Elegant Eggplant

Elegant Eggplant is a great make ahead side dish.

Ingredients

  • 2 eggplants, unpeeled, cubed
  • 1 stick butter
  • 1 onion, chopped
  • 1 medium box Ritz crackers, crushed coarsely
  • 1 can cream of mushroom soup

Directions

  1. Parboil eggplant in salted water for 10 minutes. Brown onion in butter. Mix all ingredients together and chill overnight.
  2. Pour into a casserole and bake at 350 degrees F for 45-60 minutes.
