Ingredients
- 2 eggplants
- 1/2 cube of butter
- 3 eggs
- 1 teaspoon salt
- 1/4 teaspoon of sugar
- 1/2 cup milk
Directions
- Boil eggplant until tender.
- Peel and mash eggplants and add 1/2 cube of butter.
- Let cool.
- Beat 3 eggs, add salt, sugar and milk, blend together.
- Add the ingredients to eggplant mixture and pour into a glass loaf pan.
- Bake for 1 hour at 375 degrees F.
