Ingredients

  • 2 eggplants
  • 1/2 cube of butter
  • 3 eggs
  • 1 teaspoon salt
  • 1/4 teaspoon of sugar
  • 1/2 cup milk

Directions

  1. Boil eggplant until tender.
  2. Peel and mash eggplants and add 1/2 cube of butter.
  3. Let cool.
  4. Beat 3 eggs, add salt, sugar and milk, blend together.
  5. Add the ingredients to eggplant mixture and pour into a glass loaf pan.
  6. Bake for 1 hour at 375 degrees F.
