Old fashioned eggplant casserole from scratch.

Ingredients

  • 2 medium eggplants
  • 1 1/2 pounds groun dbeef
  • 3 tablespoons bacon drippings
  • 3 tablespoons onion, chopped
  • 3 tablespoons green pepper, chopped
  • 3 small hot peppers, chopped
  • 1 teaspoon garlic, chopped
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups rice, cooked
  • 2 teaspoons lemon juice

Directions

  1. Peel and chop the eggplant.
  2. Heat the bacon dropping in a skillet, add in the eggplant, beef, onion, peppers, garlic, salt and pepper. Cook on medium for 10 minutes, or until eggplant is tender, stirring constantly.
  3. Mix in the rice. Pour the mixture into a greased baking dish.
  4. Bake in a preheated 375 degree Fahrenheit oven for 30 minutes. Once removed from the oven, sprinkle with the lemon juice.
