Old fashioned eggplant casserole from scratch.
Ingredients
- 2 medium eggplants
- 1 1/2 pounds groun dbeef
- 3 tablespoons bacon drippings
- 3 tablespoons onion, chopped
- 3 tablespoons green pepper, chopped
- 3 small hot peppers, chopped
- 1 teaspoon garlic, chopped
- 1 1/2 teaspoons salt
- 1/4 teaspoon pepper
- 1 1/2 cups rice, cooked
- 2 teaspoons lemon juice
Directions
- Peel and chop the eggplant.
- Heat the bacon dropping in a skillet, add in the eggplant, beef, onion, peppers, garlic, salt and pepper. Cook on medium for 10 minutes, or until eggplant is tender, stirring constantly.
- Mix in the rice. Pour the mixture into a greased baking dish.
- Bake in a preheated 375 degree Fahrenheit oven for 30 minutes. Once removed from the oven, sprinkle with the lemon juice.
