Ingredients

  • 1 medium eggplant
  • 1 small onion, diced
  • 2 tablespoons butter
  • 3/4 cup milk
  • 3 tablespoons Cheddar cheese, shredded
  • 1 cup crackers, crushed
  • 4 slices American cheese

Directions

  1. Pare and slice eggplant. Cook with onions in lightly salted water until tender. Drain and mash. Add other ingredients except for cheese slices.
  2. Pour in greased 1 quart casserole. Bake at 350 degrees F for 40 minutes. Arrange cheese slices on top and bake an additional 20 minutes.
