Even picky eaters will love Eggplant Casserole.
Ingredients
- 1 medium eggplant
- 1 small onion, diced
- 2 tablespoons butter
- 3/4 cup milk
- 3 tablespoons Cheddar cheese, shredded
- 1 cup crackers, crushed
- 4 slices American cheese
Directions
- Pare and slice eggplant. Cook with onions in lightly salted water until tender. Drain and mash. Add other ingredients except for cheese slices.
- Pour in greased 1 quart casserole. Bake at 350 degrees F for 40 minutes. Arrange cheese slices on top and bake an additional 20 minutes.
