Eggplant Au Gratin is a classic favorite that has a rich crusty baked top.
- 4 small eggplants
- 2 large onions, chopped
- 1, 16 ounce package Cheddar cheese, shredded
- 2 eggs, beaten
- salt and pepper to taste
- 1/4 cup cracker crumbs
- 1/2 stick butter, cut into cubes
- Peel and boil eggplant in salted water. Fry onions in butter. Add eggs and shredded cheese and combine all ingredients. Salt and pepper to taste.
- Place in greased casserole. Cover with crumbs. Dot with butter. Bake at 350 degrees for 45 minutes.
