Eggplant Au Gratin is a classic favorite that has a rich crusty baked top.


  • 4 small eggplants
  • 2 large onions, chopped
  • 1, 16 ounce package Cheddar cheese, shredded
  • 2 eggs, beaten
  • salt and pepper to taste
  • 1/4 cup cracker crumbs
  • 1/2 stick butter, cut into cubes


  1. Peel and boil eggplant in salted water. Fry onions in butter. Add eggs and shredded cheese and combine all ingredients. Salt and pepper to taste.
  2. Place in greased casserole. Cover with crumbs. Dot with butter. Bake at 350 degrees for 45 minutes.
