Egg Nog Pie is flavored with rum extract so everyone can enjoy a slice.
Ingredients
- 1, 9 inch baked pastry shell
- 1/4 teaspoon nutmeg
- 1 1/2 cups dairy egg nog
- 1 pint whipping cream
- 1 tablespoons rum extract
- 1, 6 ounce vanilla pudding mix (not instant)
Directions
- Combine pudding mix, nutmeg and egg nog in a medium sauce pan. Mx well. Cook and stir until thickened and bubbly over medium heat. Do not boil. Remove from heat and stir in rum extract. Cool thoroughly.
- Beat mixture until smooth. Whip whipping cream until soft peaks form. Fold in whipped cream. Sprinkle with extra nutmeg. Spoon mixture into pie shell. Chill 4 hours or until set.
