Tangy Lemon Squares are very sweet and satisfying.
Ingredients
- 1 cup flour
- margarine, softened
- 1 cup confectioners' sugar
- 2 eggs
- 1 cup sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons lemon juice
- 1/2 teaspoon vanilla extract
- 1-1/2 teaspoons milk
Directions
- Combine flour, 1/2 cup margarine and 1/4 cup confectioners' sugar in a bowl, mixing well. Press into the bottom of a 9-inch square baking pan.
- Bake at 325 degrees F for 30 minutes.
- Combine the next 5 ingredients in a bowl, beating until fluffy. Pour over first layer. Bake for an additional 25 minutes. Cool thoroughly.
- Combine remaining 3/4 cup confectioners' sugar with 1 tablespoon margarine, vanilla and milk in a small bowl, blending until smooth. Spread glaze over lemon layer and cut into squares.
