Tangy Lemon Squares are very sweet and satisfying.

Ingredients

  • 1 cup flour
  • margarine, softened
  • 1 cup confectioners' sugar
  • 2 eggs
  • 1 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons lemon juice
  • 1/2 teaspoon vanilla extract
  • 1-1/2 teaspoons milk

Directions

  1. Combine flour, 1/2 cup margarine and 1/4 cup confectioners' sugar in a bowl, mixing well. Press into the bottom of a 9-inch square baking pan.
  2. Bake at 325 degrees F for 30 minutes.
  3. Combine the next 5 ingredients in a bowl, beating until fluffy. Pour over first layer. Bake for an additional 25 minutes. Cool thoroughly.
  4. Combine remaining 3/4 cup confectioners' sugar with 1 tablespoon margarine, vanilla and milk in a small bowl, blending until smooth. Spread glaze over lemon layer and cut into squares.
