This tasty Cajun Jambalaya meal in a pot can be done in 30 minutes on a busy weeknight or slow cooked on a weekend.
Ingredients
- Prechopped Mirepoix (1 cup each finely chopped onion, celery, carrot
- 3 tablespoons olive oil
- 2 cups smoked diced ham
- 1/2 teaspoon cayenne pepper
- 1 teaspoon chili powder
- 1 teaspoon salt
- 2 teaspoon pepper
- 1 small can tomato sauce
- 1 large can diced tomatoes
- 2 bay leaves
- 1 pound uncooked, shelled shrimp
- 1 cup quick-cook rice
Directions
- In a large pot saute Mirepoix in olive oil until soft.
- Add next 8 ingredients and a cup of water.
- Simmer for 15 minutes then add rice and cover for 10 minutes
- Add shrimp and cook until pink (about 5 minutes)
- Serve hot
