This tasty Cajun Jambalaya meal in a pot can be done in 30 minutes on a busy weeknight or slow cooked on a weekend.

Ingredients

  • Prechopped Mirepoix (1 cup each finely chopped onion, celery, carrot
  • 3 tablespoons olive oil
  • 2 cups smoked diced ham
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 2 teaspoon pepper
  • 1 small can tomato sauce
  • 1 large can diced tomatoes
  • 2 bay leaves
  • 1 pound uncooked, shelled shrimp
  • 1 cup quick-cook rice

Directions

  1. In a large pot saute Mirepoix in olive oil until soft.
  2. Add next 8 ingredients and a cup of water.
  3. Simmer for 15 minutes then add rice and cover for 10 minutes
  4. Add shrimp and cook until pink (about 5 minutes)
  5. Serve hot
