• 2-1/2 pounds Italian sausage cut in 2-inch pieces
• 1/4 cup olive oil
• 8 stalks celery, cut in 1-inch pieces
• 8 potatoes, quartered
• 2 teaspoons salt
• 1/2 teaspoon pepper
• 2-1/2 cups canned tomatoes, mashed
• 1/2 cup water
• 1 bay leaf
• 1 onion, minced
