Ingredients
- 1/2 small onion, minced
- 3 tablespoons olive oil
- 1 (15.5 ounce) can garbanzo beans, rinsed and drained
- 1/3 cup low-fat sour cream
- 1/3 cup cornmeal
- 4 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon salt
- 3/4 teaspoon hot sauce
Directions
- In a skillet over medium heat, cook the onions in 1-2 teaspoons of olive oil until soft and slightly browned.
- In a food processor, pulse the garbanzo beans, sour cream, 3 tablespoons of cornmeal, garlic, spices, salt, and hot sauce until smooth. Transfer to a bowl and stir in the onions. Cover and chill for 30 minutes.
- When ready, place remaining cornmeal in a shallow dish. Form the garbanzo bean dough into 6 falafel cakes, 1/2-inch thick. Then roll the cakes in cornmeal.
- Heat remaining olive oil in a large skillet over medium heat. Cook the falafel cakes until golden brown on both sides, about 5 minutes per side. Serve warm.
