This rich coffee cake is surprisingly easy to prepare. Serve with coffee or tea.
Ingredients
- 1-1/4 cups flour
- 1 cup light brown sugar
- 1/4 teaspoon salt
- 4 tablespoons butter
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1 egg
- 1/2 cup buttermilk
- 1/2 cup chopped nuts
Directions
- Preheat oven to 375 degrees.
- Mix together flour, sugar and salt.
- Blend butter into flour combination until mixture becomes coarse. Reserve 1/2 cup for topping.
- Add baking powder, baking soda and cinnamon into mixture; blend well.
- In a separate bowl, combine egg and buttermilk; add to cinnamon mixture.
- Fold in chopped nuts.
- Pour batter into a prepared baking dish. Sprinkle reserved topping mixture over top of batter.
- Bake at 375 degrees for 30-35 minutes.
