This rich coffee cake is surprisingly easy to prepare. Serve with coffee or tea.

Ingredients

  • 1-1/4 cups flour
  • 1 cup light brown sugar
  • 1/4 teaspoon salt
  • 4 tablespoons butter
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 egg
  • 1/2 cup buttermilk
  • 1/2 cup chopped nuts

Directions

  1. Preheat oven to 375 degrees.
  2. Mix together flour, sugar and salt.
  3. Blend butter into flour combination until mixture becomes coarse. Reserve 1/2 cup for topping.
  4. Add baking powder, baking soda and cinnamon into mixture; blend well.
  5. In a separate bowl, combine egg and buttermilk; add to cinnamon mixture.
  6. Fold in chopped nuts.
  7. Pour batter into a prepared baking dish. Sprinkle reserved topping mixture over top of batter.
  8. Bake at 375 degrees for 30-35 minutes.
