Easy Coffee Cake can be prepared ahead and makes a great brunch dish.
Ingredients
- 1 box yellow cake mix
- 1 box instant vanilla pudding
- 4 eggs
- 1 cup sour cream
- 2 tablespoons butter, melted
- 1/4 cup vegetable oil
- 1/4 cup water
- Topping: 1 cup pecans, crushed
- 1/2 cup brown sugar
- 2 teaspoons cinnamon
Directions
- Mix all ingredients together for 4 minutes with mixer. Pour 1/2 of batter into a greased and floured tube pan. Mix topping ingredients and sprinkle 1/2 over batter. Repeat with remaining batter and topping.
- Bake at 350 degrees F for 35 minutes. Cool 10 minutes and take out of pan.
