Ingredients

  • 1/2 cup flour
  • 2 tablespoon butter
  • 1 teaspoon vanilla
  • 1 teaspoon coconut extract
  • 2 cups milk
  • 4 eggs
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • fresh raspberries and extra coconut for garnishing

Directions

  1. Grease and flour a glass pie plate. Mix milk, eggs, flour, sugar, butter, vanilla, coconut extract and salt in a blender for 3 minutes. Pour mixture into prepared pie plate and bake at 350 degrees F for 55 minutes or until set. Cool pie on wire rack.
