Summer's around the corner!  Chilled Cucumber Soup is a welcomed addition at an elegant garden party.


  • 1, 10 3/4 ounce can chicken broth
  • 8 ounces sour cream
  • 1 large cucumber, peeled, seeded and finely minced
  • 1/2 small onion, minced
  • 1 clove garlic, crushed
  • 1 tablespoon fresh dill, minced
  • 1/4 teaspoon salt
  • black pepper to taste


  1. Whisk broth and sour cream together in a medium bowl. Add cucumber, onion, garlic and remaining seasonings to sour cream mixture. Stir to combine. Chill thoroughly before serving. Garnish with additional dill sprigs.
