Summer's around the corner! Chilled Cucumber Soup is a welcomed addition at an elegant garden party.
- 1, 10 3/4 ounce can chicken broth
- 8 ounces sour cream
- 1 large cucumber, peeled, seeded and finely minced
- 1/2 small onion, minced
- 1 clove garlic, crushed
- 1 tablespoon fresh dill, minced
- 1/4 teaspoon salt
- black pepper to taste
- Whisk broth and sour cream together in a medium bowl. Add cucumber, onion, garlic and remaining seasonings to sour cream mixture. Stir to combine. Chill thoroughly before serving. Garnish with additional dill sprigs.
