These bacon roll ups are filled with pork sausage stuffing and are a great make-ahead appetizer that also freezes well.
- 1/4 cup margarine
- 1-1/2 cups herb seasoned stuffing mix
- 1 egg, slightly beaten
- 1/4 pound mild sausage
- 2/3 pound bacon, sliced
- Melt margarine in a saucepan. Remove from heat and stir in 1/2 cup water and stuffing mix. Add egg and sausage; blend thoroughly. Chill for one hour for easier handling. Shape into small pecan-shaped nuggets.
- Cut bacon into thirds, crosswise. Wrap one piece around each stuffing ball. Fasten with a wooden pick. Place on a rack in a shallow pan.
- Bake at 375 degrees F for 35 minutes or until crisp and brown. Drain on paper towels. Serve hot.
