Double Quick Batter Rolls are made in muffin cups.
- 1 package dry yeast
- 2 tablespoons sugar
- 1 teaspoon salt
- 2-1/4 cups flour, sifted
- 1 egg
- 2 tablespoons soft shortening
- Dissolve yeast in 1 cup warm water in bowl. Stir in sugar, salt and half the flour. Add egg and shortening, mixing well. Beat in remaining flour until smooth.
- Let rise, covered, for about 30 minutes or until doubled in bulk. Stir dough down. Fill greased muffin cups 1/2 full.
- Let rise for 20 to 30 minutes or until batter reaches top of cups. Bake at 375 degrees F for 15 to 20 minutes.
