Double Quick Batter Rolls are made in muffin cups.

Ingredients

  • 1 package dry yeast
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 2-1/4 cups flour, sifted
  • 1 egg
  • 2 tablespoons soft shortening

Directions

  1. Dissolve yeast in 1 cup warm water in bowl. Stir in sugar, salt and half the flour. Add egg and shortening, mixing well. Beat in remaining flour until smooth.
  2. Let rise, covered, for about 30 minutes or until doubled in bulk. Stir dough down. Fill greased muffin cups 1/2 full.
  3. Let rise for 20 to 30 minutes or until batter reaches top of cups. Bake at 375 degrees F for 15 to 20 minutes.
