This uniquely named champagne cocktail made with absinthe is a creation of the late Ernest Hemingway, who surprisingly advised those making the beverage to, “Drink three to five of these slowly.”


  • 1 ounce absinthe
  • Champagne, chilled


  1. Place a champagne flute into the freezer for 5 minutes to chill.
  2. Pour the absinthe into the prepared glass and then fill with the chilled champagne. Serve immediately.
