Date and Pecan Loaf

This sweet and moist bread accompanies tea or coffee well. Walnuts may be used instead of pecans if needed.

Ingredients

  • 1 cup chopped dates
  • 3/4 cup boiling water
  • 4 tablespoons butter
  • 1/3 cup dark brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1/4 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 teaspoon nutmeg
  • 3/4 cup chopped pecans

Directions

  1. Place dates in a bowl and pour boiling water over top; set aside to cool.
  2. Preheat oven to 350 degrees. Grease loaf pan.
  3. Cream butter and sugars; beat in egg and set aside.
  4. Combine flour, baking powder, salt and nutmeg. Fold into sugar mixture with dates and water.
  5. Add nuts.
  6. Pour mixture into prepared loaf pan.
  7. Bake at 350 degrees for 45-50 minutes.
