Ingredients

  • 4 large apples, peeled and cored, coarsely diced
  • 1/2 cup nuts, chopped
  • 1 cup vegetable oil
  • 1 3/4 cups sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Directions

  1. Mix chopped apples with nuts. Set aside. Cream oil and sugar together; add eggs one at a time, then vanilla. Add dry ingredients gradually. Then add apples and nuts.
  2. Turn into a greased 9 by 13 inch baking pan. Bake at 350 degrees F for 45 minutes.
