Daikon radishes are combined with umeboshi (pickled ume fruits) in this flavorful Asian-inspired salad dish.
Ingredients
- 1 teaspoons minced umeboshi
- 1-1/4 cup shaved daikon
- 1/4 cup pea shoots
- 4 cups mixed greens
- 2 cups coined carrots
- 2 tablespoons sesame oil
- 2 tablespoons soy sauce
- 2 tablespoons sugar
- 2 tablespoons rice vinegar
- 2 teaspoons ground black pepper
- 1 tablespoon black sesame seeds
- 1 tablespoon mayonnaise
- 1 teaspoon lemon juice
Directions
- Place the sesame oil, soy sauce, sugar, rice vinegar, pepper, sesame seeds, mayonnaise and lemon juice in a large salad bowl and whisk vigorously to combine.
- Add the daikon, umeboshi, pea shoots, mixed greens and carrots to the bowl and toss the mixture gently to coat. Serve immediately.
