Daikon radishes are combined with umeboshi (pickled ume fruits) in this flavorful Asian-inspired salad dish.

Ingredients

  • 1 teaspoons minced umeboshi
  • 1-1/4 cup shaved daikon
  • 1/4 cup pea shoots
  • 4 cups mixed greens
  • 2 cups coined carrots
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 2 tablespoons sugar
  • 2 tablespoons rice vinegar
  • 2 teaspoons ground black pepper
  • 1 tablespoon black sesame seeds
  • 1 tablespoon mayonnaise
  • 1 teaspoon lemon juice

Directions

  1. Place the sesame oil, soy sauce, sugar, rice vinegar, pepper, sesame seeds, mayonnaise and lemon juice in a large salad bowl and whisk vigorously to combine.
  2. Add the daikon, umeboshi, pea shoots, mixed greens and carrots to the bowl and toss the mixture gently to coat. Serve immediately.
