Cucumber Dill Sauce adds a refreshing touch to poached salmon.
- 1 large cucumber
- 1 cup sour cream
- 1 tablespoon dried dill
- 1 tablespoon chives, chopped
- salt and white pepper to taste
- Peel, seed and cut into chunks the cucumber. Chop in food processor.
- Sprinkle with salt and let stand one hour in refrigerator. Drain off the liquid.
- Add sour cream, dill, chives, pepper and salt. Mix well.
