Cucumber Dill Sauce adds a refreshing touch to poached salmon.


  • 1 large cucumber
  • 1 cup sour cream
  • 1 tablespoon dried dill
  • 1 tablespoon chives, chopped
  • salt and white pepper to taste


  1. Peel, seed and cut into chunks the cucumber. Chop in food processor.
  2. Sprinkle with salt and let stand one hour in refrigerator. Drain off the liquid.
  3. Add sour cream, dill, chives, pepper and salt. Mix well.
