Crusty Peach Cobbler is made with fresh peaches.

Ingredients

  • 3 cups fresh, sliced peaches
  • 1/4 cup sugar
  • 1 teaspoon lemon rind, grated
  • 1 teaspoon almond extract
  • 1 tablespoon lemon juice
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 3 teaspoons baking powder
  • 1 tablespoon sugar
  • 1/3 cup shortening
  • 1/2 cup milk
  • 1 egg

Directions

  1. Arrange peaches in an 8 inch baking dish. Sprinkle with sugar, rind, extract and juice. Place in oven and bake at 400 degrees F while making shortcake crust.
  2. Combine dry ingredients, cut in shortening and mix. Add milk and egg at once. Spread dough over hot peaches. Sprinkle with 2 tablespoons sugar. Bake at 400 degrees F for 35-40 minutes.
