Crock Pot Fajitas

These fajitas can be served rolled up in a tortillas or on a bed of rice.


  • 1 rump roast
  • 1 tablespoon chili powder
  • 1 medium onion, chopped
  • 1 can chopped chilies
  • 1 can Rotel tomatoes and chilies, chopped
  • 1 can cream of mushroom soup
  • 1 cup dried pinto beans, washed
  • 1 can water


  1. Rub roast with chili powder.
  2. Place in crock pot.
  3. Then layer the beans, chilies, onions, mushroom soup, Rotel and water in the order that is listed.
  4. Cover and cook on low for 9 to 10 hours.
  5. Do not open lid, do not stir, do not even look at it until done.
  6. When done take out of crock pot and put into large dish.
  7. With forks, pull apart the roast and mix up the whole thing.

We have been making this for a couple of years now. We've added something about the last hour to 2 hours of cooking that makes use of all the juice (gravy). Get an 8 ounce bag of Vigo brand mexican rice. Shake the bag up to evenly distribute the clumps of spices and pour the bag all around the top of the mixture in the crock pot. The rice will soak up all of the excess juice and make it even more filling. You could probably use any kind of rice, I just really like the Vigo flavorings.
