An elegant French cocktail made with pear puree; serve this in late fall when pears are in season.
- 4 bar spoons of pear puree
- 1/2 ounce simple syrup
- 3/4 ounce Lillet Blanc
- 2 ounces Silver Tequila
- splash of sparkling white wine
- Place the pear puree, simple sugar, Lillet Blanc and Tequila in a shaker filled with ice, and shake vigorously for 20 seconds.
- Strain the mixture into a cocktail glass and then top with the wine. Garnish with a thin slice on pear if desired.
